Arepa with Baby Bella Mushrooms

Have I ever mentioned that I have an unhealthy obsession with “arepas”? Well, I do.

One morning, I felt like including some mushrooms in my breakfast, but still had a craving for this Colombian delight. So I sautéed some baby bella mushrooms with a little bit of oil, and added some salt and pepper for taste.

I grilled the “arepa” on the stove with a special grill I have, and spread some vegan butter on it when it was done. (I like to grill my “arepa” until it’s nice and crispy, yet not burnt. However, you can grill it to your heart’s desire.) Then I poured the sautéed mushrooms over the “arepa” and viola. It was amazing! A must try! Buen provecho!

Arepa with Sauteed Baby Bella Mushrooms

Ingredients:

  • 1 Pre-Made “arepa”
  • 1 cup sliced Baby Bella mushrooms (You may also use any other type of mushroom.)
  • Oil for sautéing
  • Salt and pepper to taste

NOTE: If you can’t find the pre-made “arepas” in your area, you can make your own using white corn meal. They’re super easy and super yummy.

Oh, by the way, the grill I used to heat up the pre-made “arepas” was kinda difficult to find, at least in my area. So I had my mom send me one straight from Colombia. However, a couple of weeks ago I found them in a Hispanic market in Miami. Go figure! Below is an image if you’re looking for one. Good luck!
